Food Sucralose is an artificial sweetener and sugar substitute. It is stable under heat and over a broad range of pH conditions. Therefore, it can be used in baking or in products that require a long shelf life. Sucralose is not sugar. Although sucralose provides sweetness, its structure prevents enzymes in the digestive tract from breaking it down. Sucralose is the no-calorie sweetener in regular Splenda retail sweeteners and it is also used in other retail sweeteners, such as those sold under store brand names.
