About Maraschino Cherry in Developing
The current maraschino cherry is a long industrial process. Light-colored sweet cherries, like Royal Ann, are brined in a solution usually containing sulfur dioxide and calcium chloride. Here, the cherries are bleached, and their original color and flavor are taken away, but their texture is retained. Afterwards, excess sulfur dioxide is leached out following a water wash. Hot sugar syrup, mixed with red food dye (Allura Red AC) and, generally, almond flavoring is used for immersion weeks on end. The infusion in this way sweetens the cherries and gives them their bright red color as well as artificial almond flavoring. After that, the cherries are pitted and stemmed when necessary, the cherries are packed in sugar syrup for sale. This method of manufacture was developed specifically to create a stable product that appealed to the eye and is notably different from the original means of preservation of Marasca cherries in maraschino liqueur.
