Natamycin is a fungicide which avoids yeasts and moulds from appearing in foods. It is very effective when used in lesser amounts. It is used in small extents as compare to potassium sorbate and unlike other sorbates it prevents yeasts and fungi from migrating into the product, eliminating the cost of reapplication. The action of natamycin does not destroy other bacteria, which means that it does not alter the food natural maturing process. Natamycin is different from other antimicrobial agents as it does not affect the appearance, taste or colour of the products.
