It is a new technology that which hold moisture or liquids that contain some solid matter to be dried almost to the point with zero moisture. This is why freeze-dried food has a longer shelf life as compare to dry food. Freeze-dried food involve a freezing step, but the end result is not a frozen product. The freeze drying food maintains 97% of the nutritional value. While the other methods of preservation, like as canning and dehydrating, use high temperatures that wipe out much of the food value.
